Food should be a resource not a waste.

Yet we’re throwing 40% of our food in the landfill each year. It’s harmful to the environment, it hurts the economy, and when 1 in 7 people are food insecure we cannot be wasting this much. Plus, it’s not just the food that is going to waste. It’s also the resources that went into growing, preparing and transporting the food.

 

Saving Scraps: A Culinary Competition.

At the 2018 Midwest Food Recovery Summit, students from the Iowa Culinary Institute at Des Moines Area Community College had a little bit of fun while tackling the food waste problem.

Armed with only leftovers from the conference and some staple ingredients, two student teams squared off head-to-head for the titles of Best Tasting Dish and Most Innovative Use of Food Waste.
