Hosted by the Nebraska Business Development Center, apply Lean to save money and time and reduce waste in your food service business.

Lean manufacturing is used to drive out costs, reduce lead times, improve flexibility and eliminate non-value adding activities. These same principles can be used in food service work, such as cafeterias, to save money, time, and reduce food wastes.

The Lean Cafeteria workshop will provide hands-on training that teaches the transformational approach of Lean. You will learn techniques for realizing continuous improvement in your food service. 

LEARN FROM EXPERIENCE.
Practice Lean concepts away from your workplace in a pressure-free environment. The Kanban Pizza Game used in this workshop will give you the experience of applying Lean principles in a fast-paced, fun exercise. Kanban is a Lean tool designed to reduce idle time in a process. The aim is to deliver what the process needs exactly when it needs it.


YOU WILL:

  • Experience how a Kanban system develops from an existing process, as it does in the real world
  • Experience a whole Kanban system, as opposed to focusing only on the Kanban board and related mechanics
  • Understand the effects of limiting your Work in Progress
  • Experience self-organization and adaptation
