7 Hills Brewing Company is located in the heart of downtown Dubuque, Iowa.  Known to be unapologetically individualistic, 7 Hills Brewing has made it their mission to create an organization that allows people from all walks of life to come in and discuss what's on their minds.  When you visit their webpage dedicated to their beer selection, it immediately becomes apparent how creative they are with the artistic depictions and names of their beers. Court Ave Brewing Co.

From the first moment until the last moment we spent time with the head brewer from Court Ave, we knew that something special and important was happening in this downtown brewery and restaurant.  Located on Court Ave, right outside of the courthouse in Downtown Des Moines, is a brewery that began their delicious selection of ales and IPAs in 1996. While talking with Aaron, the head brewer, about their sustainability program, he seemed very happy with what they were doing.  Court Ave Brewing Co. makes sure that their spent grain is sent to a local farmer for feed, and they've recently discontinued the use of plastic straws in their restaurant. Exile Brewing Co.

"Quality is not an act, it is a habit" is a quote from Aristotle that you'll find on Exile's sliding refrigerator door, and it's a great sentiment to the incredible work they do over in Des Moines.  R.J. Tursi is the founder and owner of Exile Brewing Company in downtown Des Moines, and they pride themselves on their attention to detail. A subgoal to their core values is to always minimize waste and make sure their impact on the environment is minimal.  One interesting fact that not too many people know about is that the picture of the Italian man in their taproom is actually R.J.'s grandfather that migrated to the United States, the italian roots run deep in this family. In terms of sustainability, R.J. notes that if your brewery hasn't been audited, you could be losing out of a lot both environmentally and financially.
