Laurel Burleson

Burleson has been working in the culinary world for the last 16 years. In most kitchens, there is a lot of food waste. When she started her business last year she decided to focus on seconds and overstock produce from local farmers and producers. These extras are now the center of the Ugly Apple food cart, where they become tasty breakfast dishes for downtown Madison and the surrounding area and bring awareness about how seconds can be used rather than discarded for esthetic damage. She also donates her extras to local food banks to not waste anything that might help feed the hungry.
